Cookie Spree!

Tomorrow, Sunday is the last practice for our dragonboat team so I decided to bake cookies for everyone...just for kicks. I had compiled about a dozen cookie recipes that I want to try out and figured this would be the perfect time to do so. Or course, I'm incapable of making "hard" choices like this one so I decided to tackle three cookies in one night. 

About 140 cookies were made. It was insanity. But looking at the trays of cookies that came out of the oven every dozen minutes was so satisfying!






Killer Chocolate Cookies!


The Killer Chocolate Cookies were pretty straightforward to make. The best part about them is that they don't require ANY fat (no butter, margarine, lard, oil) at all! So the chocolate just hits you. You can eat these almost guilt-free, if you ignore the sugar...

Love oatmeal cookies of any kind!


The Cranberry Oatmeal Cookies were well received. The dough needs to be chilled sufficiently long enough to be easier to work with. I used a mix of old-fashioned rolled oats and quick cook oats just for variety. Not a hugely sweet cookie so it pleases a wider range of tastes.

And finally, the Ginger Molasses Cookies, very “à la saison”. They’re relatively easy to make as well. And the results are very consistent which makes for a “keep it!” recipe. The ground black pepper gives it the slight kick it needs. It’s super important that you chill the dough thoroughly and when you do work with it, that you do so lithely. With the same dough, I made gingermen / gingerwomen and the typical round cookie. The former came out crispier (seeing as they were thinner) whereas the round cookies had a nice soft centre. I prefer making smaller cookies in the attempt to avoid binging…but then more would fit into a box.
