Banana Bread

Got about 13-16 slices for one loaf.



Banana bread is one of my go-to recipes when I have a craving to bake. It’s pretty simple and other I usually have all the ingredients on hand. It does take kinda long to bake but the result is always rewarding! :D

So when I found myself itching to bake something...but I knew I didn't feel like cookies or cake, banana bread time!!










 
Banana Bread   (makes 1 loaf)
1¾ cup  flour                          ⅓ cup     margarine / butter
2 tsp       baking powder          ⅓ cup     brown sugar, packed
½ tsp      baking soda              ⅓ cup    granulated sugar
¼ tsp      salt                           2             eggs
(¼ cup   chopped nuts)           1 cup + 1 tbsp mashed ripe banana (around 3)

of course I must show the organized chaos that is prepping any recipe ;)

Preheat oven to 350ºF.
In a bowl, mix flour, baking powder, baking soda, and salt.





 
Now it's being put to good use, mashing the bananas.


In another bowl, cream margarine (or butter) and sugars until light & fluffy, 7 min.
Beat in one egg at a time.
Add mashed banana.


Slowly add in flour, mix until well blended.
If using nuts, stir them in. (My brother's hugely allergic so I never use nuts)



 

Pour batter in a greased 8x4x2-inch loaf pan.
Bake for 55-60 min or until a toothpick inserted near the center comes out clean.

Cool for 10 min on wire rack.
Remove from pan; cool completely. Slice.

Allowing it to cool on the wire rack.


*Eating it after it has cooled, you will get a slight crunch from the crust.
*Wrapping and storing it overnight before slicing will prevent the crust from crumbling.







Looks dense but it's not exactly cake so it should be all that airy either.


Turned out alright. Lots of banana flavour


This time, I decided to use more banana than usual (3 large) and I liked what I got. The bread was more moist than my previous ones. Hope you enjoy this recipe! :D
